We are in the process of cleaning the culinary lavender that we harvested this summer. Hidcote and Folgate are the main varieties that we harvest for this purpose. We remove the buds from the stems , then do a more thorough cleaning to remove any bits of stems or leaves to end up with pure purple buds perfect for to bake with or add to our Herb de Provence blend.
